Simple Basic Chicken Enchilada Soup

I make this soup as an alternative to regular chicken soup. The kids love it because they can add in whatever toppings they want or have it plain. I don't make It spicy because the kids don't like spicy very much, but you can change it up however you like. It's a good base recipe . I choose to cook my whole chickens from frozen because it's just easier. You can use fresh chicken or you can make it super
Easy and buy a rotisserie chicken and some broth and make it too, it's very versatile. We like to double it and share with our neighbours or freeze it. i hope

Chicken enchilada soup recipe
Ingredients
1 whole chicken (frozen)
Enough Water to cover chicken
1 tbsp cornstarch
2 tsp salt (or to taste )
Pepper to taste
1tbsp Chili Powder
1/2 tbsp Cumin
1tbsp Garlic powder
1/2 tbsp onion Powder
1 small Small bag Frozen corn
One bunch Cilantro
1 can Black beans
1can Can diced tomatoes
1 jar store bought or home made enchilada sauce
Toppings (optional) :
Green onion
Sour cream
Jalepenos
Tortilla chips
Any cheese ( I used cojita)
Slices of avacado
Hot sauce
Instructions
Put your Whole frozen chicken in a stock pot and cover with water plus a bit more to make the broth. Add in 2 tsp salt and boil.
Boil chicken to temperature (tip: usually when you can pull the Legs off easily the internal temp will be accurate).
strain liquid from chicken and put liquid back in stock Pot (this is your broth ). Set chicken aside.
Strain and discard liquid from can of black beans.
Add beans, diced tomatoes, enchilada sauce and frozen corn into broth.
Add remaining spices into pot and stir
Bring broth to a boil
While boiling broth, remove chicken from bones, shred the meat and add into the soup.
Once broth is boiled, carefully remove one cup of liquid. Whisk in the cornstarch until Combined with no lumps.
Add the cornstarch mixture into the pot of broth slowly and mix. once it's all mixed in, Reduce broth to simmer.
Simmer soup down and taste it. Add seasonings and chopped cilantro until it tastes how you prefer.
Serve in a bowl and set out the toppings for people to choose from
Enjoy!
We always have leftovers which we jar up and use for supper another day. It also freezes great.
