We made this today and it was really easy and super yummy so I figured I'd share how. The article I found the idea in said it helps with digestion, joint pain and bloating.
We did add fresh grated turmeric and a bit of lemon juice to ours. You can modify it however you like.

Ingredients:
1-2 inches of fresh ginger root
2 cups of water
Honey or lemon (optional)
Instructions:
Start by peeling the ginger root and then thinly slice it or grate it. I chose to mince mine up so out fits in our glass swing top bottles.

In a saucepan, bring 2 cups of water to a boil.
Add the sliced or grated ginger to the boiling water.
Reduce the heat to low, cover the saucepan, and let it simmer for about 10-15 minutes. This will allow the ginger to infuse its flavor into the water.
After simmering, remove the saucepan from the heatand let it cool slightly.
If desired, you can add a teaspoon of honey or a squeeze of lemon for added flavor.
Strain the ginger water into a cup or mug to remove the ginger pieces. I left mine in.
Your ginger water is ready to drink! Enjoy it hot or let it cool down for a refreshing cold beverage.
