Simple Basic "Healthy" Muffin Recipe

We make these muffins every week for our lunches, usually on Sunday. We like to double it and share with our neighbour whose kids also seem to enjoy them (link to my giant 24 x muffin making tin ) They're a great way to use up bananas that are spotty or the bananas we've frozen. They're banana but sometimes we add in some blueberries or chocolate chips or cranberries depending on the season. They're pretty forgiving. Because there is yogurt in them and they are quite moist, I like to refrigerate any we don't eat after the first couple of days just to be safe. They're super Easy and yummy.


"Healthy" Muffin Recipe


Ingredients


2 ripe bananas

1/3 cup vegetable oil

1 egg

1tsp vanilla

1/3 cup greek yogurt

3/4 cup sugar

1/8 tsp salt

1 1/2 tsp baking powder

1/2 tsp baking soda

1 3/4 cups flour


Optional:

Some brown sugar for sprinkling on top

1 cup blueberries, chocolate chips

Or whatever you want to mix in.


Instructions


  1. Preheat your oven to 350 F

  2. Line muffin tins with liners or grease them

  3. Mix mashed bananas, egg, sugar, oil, yogurt and vanilla together

  4. Add dry ingredients and combine completely

  5. Mix in anything you want to add in

  6. Fill muffin cups 3/4 full. I like to use an ice cream scoop

  7. Sprinkle with brown sugar if you feel like it

  8. Bake at 350 F for 20-25 Mins

  9. Cool on cooling rack

  10. Serve and enjoy!
