Simple Basic Egg Bites

If you love the Starbucks egg bites but not the price, you're in the right place. My husband requests these weekly to take to work. What we put in them depends on what we have. Sometimes they're bacon and cheese or spinach and cottage cheese. Today they were goat cheese and red pepper. I used those sheppard peppers I froze in the fall (thanks to my friend, Grayce for that wonderful Idea. If you follow me on instagram you know what I'm referencing there.

I love this recipe cause it's super easy to throw together on a Sunday and they last the whole

Week in a Tupperware. It's pretty flexible too. Like This time I used 14 eggs cause they needed to be used and sometimes I cut it in half if it's a short week. You can swap out the toppings for whatever you like. I do use these silicone pans because I used to oil muffin tins and it just wasn't the same and far too annoying to clean.

Egg Bite Recipe


Ingredients :

12 eggs

Goat cheese (I used 250g)

Large red pepper

2tbsp garlic plus spice (Or whatever spice blend you prefer)

1tbsp kosher salt

Pepper (to taste)

1tsp baking powder

Baking dish full Of water to put in oven


Instructions:

  1. Place baking dish full of water on bottom rack (this is the "sous vide " part )

  2. preheat oven to 300 degrees

  3. Dice peppers

  4. Crumble cheese

  5. Crack eggs into a bowl and whisk until bubbly.

  6. Sprinkle baking powder on eggs and whisk until combined

  7. Add in kosher salt and garlic plus spice and whisk

  8. Crumble in feta and add in diced peppers and give it a stir

  9. Scoop into muffin pans and crack some pepper on top if you want to

  10. Wipe the edges of muffin trays.

  11. Place on middle rack

  12. Bake 30-40 mins until egg is no longer jiggly.

  13. Let sit for five minutes or so, then remove with spoon and place on cooling rack.

  14. Cool completely

  15. Pack in a sealed container with some paper towel to absorb any extra liquid and refrigerate.

  16. Take the pan of water out of your oven once cool and don't forget it in there like I always do.

  17. Enjoy !
