Simple Basic No butter needed Oatmeal Cookies optional chocolate chips

This is a really easy basic recipe for some oatmeal cookies I make for lunch snacks for my kids. You can add in whatever mix ins you like or make them plain. You can add more oatmeal or less depending on how chewy you prefer your cookies. They do need to go in the fridge for an hour before baking so mix them up, set them in the fridge, and do a few chores before you preheat your oven to 350 degrees.

They keep well, and the kids like them and so do the adults. The ingredients are basic ones so hopefully you've hit them on hand. I created these one day when I realized I was out of butter. Now I just keep making them this way because it requires less prep.


Ingredients :


Bowl 1:

1 cup of flour

1 Tsp cinnamon

1 Tsp baking soda

1/2 Tsp Salt


Bowl 2:

2/3 Cup Vegetable oil

1/3 Cup white sugar

1 Cup brown sugar

2 eggs

2 Tsp vanilla

2 cups rolled oats

1 1/2 cups mix ins (optional)

these could be chocolate chips, raisins, craisins etc. I used chocolate.


Instructions :

  1. Batter must chill in fridge for one hour so mentally prepare yourself to come back in about 45 mins and preheat your oven to 350.

  2. In a bowl, mix up flour, cinnamon, baking soda and salt. Combine and set aside.

  3. In a seperate bowl mix up oil, eggs, vanilla, and both sugars. mix that all up until well combined.

  4. add in half the dry ingredients from your other bowl and mix up. Then add in the rest of the dry ingredients and combine until smooth.

  5. Mix in the oats. Then add in any mix ins and stir (chocolate chips etc).

  6. Cover and refrigerate for 1 hour minimum

  7. Make sure that oven i preheated to 350

  8. Line cookie sheets with parchment sheets or liners (this makes about 30 cookies depending on size so get lots of trays out or maybe a giant sheet like mine if you have one).

  9. Bake for 12-15 mins

  10. Leave on the pan for 10 mins to cool and ensure you can remove them without them breaking.

  11. Then remove to cooling rack for a little longer

  12. Put in a container or cookie jar and hide some from your family for later. Trust me, you will be glad it's a big batch.

I really love these glass Pyrex bowls cause they stack and store so easily and I use them for everything.
